Our latest addition, ‘Hafi’, is an exciting new entry into the world of specialty coffees, originating from the vibrant coffee culture of Burundi. The name ‘Hafi’ means ‘close’ in Kirundi, reflecting both its cultural roots and the intimate connection between the land and the coffee it produces. This specialty coffee from Burundi offers an intriguing blend of flavours and aromas, capturing the essence of its unique origin.
The unique Territory of Muyinga
Terroir, a term borrowed from the wine industry, plays a crucial role in the world of coffee, encapsulating the unique environmental factors that influence the growth and flavour of coffee beans. Hafi’s terroir is rooted in the remote Muyinga province of Burundi, a region known for its challenging yet rewarding coffee farming conditions. The farmers in this area face significant logistical hurdles, including the necessity to travel up to 20 kilometres to deliver their coffee cherries. Despite these challenges, the unique environmental conditions of Muyinga, characterised by its high altitude and fertile soil, contribute significantly to the distinctive qualities of our Hafi coffee.
The Bourbon Variety
The Bourbon variety of coffee, renowned for its rich and complex flavour profile, is the foundation of our Hafi coffee specialty. This variety has a storied history, originating from the island of Bourbon (now Réunion) and spreading to various coffee-growing regions worldwide. Bourbon coffee plants are known for their resilience and ability to produce high-quality beans, making them a favourite among coffee connoisseurs. The decision to cultivate Bourbon for Hafi coffee was driven by its potential to develop deep, sweet flavours with a touch of acidity, perfectly suited to the territory of Muyinga.
Natural Processing Method
The natural processing method, also known as dry processing, is one of the oldest and most traditional methods of preparing coffee. This process involves drying the entire coffee cherry, which allows the fruit’s sugars to infuse the bean, enhancing its sweetness and complexity. For our Hafi coffee, natural processing amplifies its inherent fruity notes, bringing out vibrant flavours of dried cherries and blackberries. This method requires meticulous attention to detail and optimal weather conditions to ensure even drying and prevent over-fermentation, ultimately contributing to the high-quality taste of the final product.
Growing Conditions and Altitude
Altitude is a critical factor in coffee cultivation, influencing everything from the bean’s density to its flavour profile. Our Hafi coffee is grown at an elevation of 1,715 metres, a height that promotes slow maturation of the coffee cherries. This slower growth allows for a more concentrated development of sugars and flavours within the bean. The high altitude also means cooler temperatures, which help to preserve the delicate balance of acids and sugars, resulting in a coffee that is both sweet and complex. The unique growing conditions of Muyinga, combined with careful cultivation practices, ensure that Hafi coffee consistently meets high standards of quality.

Now thanks to a new washing station set up by the producer in 2021, the proximity enables farmers to achieve same-day processing resulting in better quality coffee.
