Deep within Tarrazú, the renowned coffee nursery of Costa Rica is where the country’s coffee legacy first began. Grown at elevations between 1,600 and 1,900 metres above sea level by dedicated smallholder farmers, this coffee embodies both innovation and environmental responsibility.
The journey begins at Beneficio San Diego, one of the most advanced and respected coffee mills in Costa Rica. Here, the coffee undergoes the meticulous honey processing method, a technique celebrated for producing beautifully balanced coffees while using significantly less water than traditional washed processing. During this process, the outer skin of the coffee cherry is removed while the sticky golden mucilage remains intact around the bean as it dries. The shorter fermentation period delivers a refined acidity and honey-like sweetness that coats the palate.
The result is an elegant and expressive cup layered with notes of yellow plum, ripe peach, and honey sweetness. A delicate wine-like character adds depth and intrigue, while its silky body and clean finish create a remarkably refined drinking experience. The acidity sits perfectly between bright and smooth, bringing balance without overpowering the cup.
