The Swiss Water Process is a chemical-free method for decaffeinating coffee. It works by first soaking green coffee beans in hot, pure water to extract both caffeine and flavor compounds. Then, this “Green Coffee Extract” (GCE) is passed through a carbon filter specifically designed to trap caffeine molecules while allowing the flavour compounds to remain.
