Origin & Quality
This coffee is produced in Mexico’s mountainous regions at elevations above 1,200 meters, which qualifies it as Strictly High Grown (SHG). The high altitude means cooler temperatures and slower cherry development. This extra time on the tree allows sugars and organic acids to develop fully, leading to a denser bean with more complexity and sweetness. Finca El Pilar use traditional and sustainable methods to provide the highest quality cup of coffee. They take pride in their land, their people and their methods.
Processing
The coffee is processed using the washed method. After harvesting, the cherries are de-pulped and fermented under controlled conditions to break down the mucilage. The beans are then thoroughly washed and carefully dried on patios or raised beds until these reach the right moisture level. This process yields a clean, consistent coffee that highlights the natural character of the beans.
