A Coffee Rooted in the Highlands of Tarrazú
From the heart of Costa Rica’s Tarrazú region is widely regarded as the country’s most important coffee-growing area. Within this landscape, smallholder farmers cultivate coffee between 1,600 and 1,900 metres above sea level, where cool mountain air slows cherry development and encourages layered sweetness within the fruit. The region has built a reputation on altitude, consistency, and careful agricultural practice, becoming the most well-known coffee-growing area in Costa Rica.
The identity of this coffee draws inspiration from one of Costa Rica’s most iconic and elusive wild animals. Jaguars inhabit the country’s dense forests and protected ecosystems, symbolising strength and agility.
Beneficio San Diego and the Craft of Honey Processing
At the centre of this coffee’s production is Beneficio San Diego, one of Costa Rica’s most advanced and respected mills. Coffee arriving here is processed using the honey method, a technique that sits between fully washed and natural styles, preserving clarity while enhancing inherent sweetness.
After harvest, ripe cherries are depulped so the outer skin is removed, while the sticky layer of mucilage is intentionally left on the seed. Rather than being washed away, this fruit coating remains during drying and becomes an active part of the next stage of development.
The coffee is then transferred to controlled drying conditions, where the beans are carefully monitored and regularly turned to ensure even fermentation and moisture reduction.
One of the key advantages of this method is reduced water usage. Unlike fully washed processing, which relies on large volumes of water to repeatedly wash away all remaining fruit material, the honey process removes the need for full washing stages altogether. Water is mainly used for depulping rather than continuous cleaning cycles, significantly lowering overall demand. This more efficient approach reduces environmental pressure while still maintaining a high level of control over quality and cup development.

The identity of this coffee draws inspiration from one of Costa Rica’s most iconic and elusive wild animals. Much like the animal it is named after, this coffee carries both boldness and elegance, combining vibrant fruit sweetness with controlled structure and smooth clarity. Catuai and Caturra varieties contribute to this balance, offering consistency, and clarity.
